A classic of Salento’s cuisine, the recipe of “Orecchiette con le cime di rapa”

It is the most rappresentative dish of Puglia. The secret lies in the quality of the turnips and in the particularity of the pasta, the orecchiette. Here it is, in a few simple steps, the recipe for making a unique dish.

Ingredients for 4 people:

1 kg of turnip greens

50 gr of breadcrumbs


1 clove of garlic

3 anchovy fillets in oil

30 gr of extra virgin olive oil

Put a pot with boiling water on the stove and dip the turnips. Cook for two minutes and then dip the fresh orecchiette.

Meanwhile, take a pan and pour some oil to fry the garlic and pepper. After about 30 seconds add the anchovies and, with the help of a wooden spoon, chop them coarsely. At this point, when the turnips and the pasta are cooked, drain everything. Pour the orecchiette and turnips in the pan and stir with a wooden spoon. When everything is ready, remove the garlic cloves and serve.
