A dish from Salento’s tradition, the recipe of fava beans and chicory

The series of recipes from Salento continues with a first course of rural tradition. A complete meal that perfectly embodies the genuineness of this land.

Has the farmer just harvested chicory from the field? Combine it with the fava beans and you will have a tasty and healthy dish.

FAVA BEANS AND CHICORY

Ingredients for 4 people:

400 gr of dried fava beans

400 gr of wild chicory

3 bay leaves

Extra virgin olive oil

Salt

Water

 

Rehydrate the beans by soaking them in cold water for about 12 hours. Then, rinse them and put them to cook in a large pot, covering them flush with the water and adding 2-3 bay leaves.

Close the pan with a lid and cook over low heat for at least 2 hours (if they are too dried, add hot water). Remove the foam while cooking the beans with a skimmer. Meanwhile, wash the chicory well under running water and let it drain, then clean and boil it in boiling salted water for a few minutes. As soon as they get tender, drain and keep aside.

When the beans have become mashed, place them with the chicory in the same dish: on one side the beans and the chicory on the other. Season with a drizzle of extra-virgin olive oil, (better if it is from Salento!) And accompany the dish with homemade bread.
