EGGPLANT “ALLA POVERELLA”
Ingredients for 4 people:
1500 gr of aubergine with peel
4 tablespoons of extra virgin olive oil
2 cloves of garlic
Wash the aubergines, dry them on sheets of absorbent paper and cut into small pieces. Sprinkle with salt and let it drain for about 30 minutes on a slanted cutting board. After removing the bitterish liquid, heat the oil in a large pan and fry them over high heat, stirring often.
Remove from the heat after about 10 minutes and, in another pan, heat about 4 tablespoons of olive oil together with the garlic and the chopped parsley. At the end, add the fried aubergines and continue cooking for another 15 minutes on low heat. Then add salt and serve hot.
